- 3 1/2 cups peeled, sliced cucumbers (Usually about 2 1/2 large cucumbers)
- 1 medium onion, sliced thin
- 1 medium bell pepper, sliced thin
- 1 cup sugar
- 1/2 cup vinegar
- 1/2 teaspoon salt
- Mix all ingredients in a bowl and chill in the refrigerator over night.

This is another recipe that has become a hit. It has a fresh and sweet taste and it’s great because you prepare it a head of time so it free’s you up while you’re cooking. With that being said, it is certainly better when it has chilled for 8+ hours (the cucumbers absorb more of the flavor and get soft and delicious!) However, I have left it to chill for a only a few hours because and it’s still great.
I typically use Balsamic Vinegar and I usually don’t add a whole onion- but those are both personal preferences.
